Well I apologize for the much delayed posts, but we had an EXTREMELY busy weekend! We had a lot of fun, little sleep, and time with family and friends! You can’t beat that!!
Friday involved having about 10 friends over after work for the evening. It was great, as some of them were friends we don’t see very often! We had wanted to cook out, but the weather was absolutely horrible: cold, windy, and a LOT of rain! So we just made stuff and stayed indoors.
Saturday I hung out with a friend all day while Chad watched the NFL draft with friends at a local Buffalo Wild Wings. Baylee was happy because she got to play with my friends’ dog, Bailey, ALL day (as well as Thursday night, and Friday night!). I also went and watched my Dad and my brother in a bowling tournament for a couple of hours. I love doing this because I not only get to watch them, but also got to hang out with my sister-in-law and my nephew! That night, we also went to a different friend’s house to play with yet another dog! It was another boxer so it was really cute watching Baylee interact. It was a little chaotic because it was 3 boxers!!! but hilarious to watch
Sunday, my old college roommate came into town! We don’t get to see each other often so it’s always great to see her! We get along SO well so we just sat and talked for hours. It was great!
As far as food….I did okay. We had a lot of leftovers from Friday night so ate that throughout the weekend. I made all healthy food so it was okay, but I ate a LOT of it. My problem is the snack foods and the dessert! They always get me into trouble! Here’s a recap:
Friday Lunch: Mrs. Grass’ Soup (YUM – I love this stuff!) with 7 Saltine Crackers
Friday Snack: Can of Pineapple & Vitamuffin
Friday Supper: Barbecue Sandwich, small handful of chips, Jello, Cake, plus (not pictured) about 5 pickles, 3 slices of cheese, and a LOT of pretzels with pretzel dip. Also, later had veggies and dip, and another BBQ sandwich. We were up very late so I was hungry again.
Saturday Breakfast: Leftover Peach Cobbler. I figured it’s just oatmeal and peach so would make a great breakfast….and I was right! I will definitely be making this EASY recipe again!
Saturday Lunch: Couscous with Shrimp Scampi, and a little cheese bread. For the scampi, all I did was thaw out some cooked shrimp, and sauteed them with a little Olive Oil and garlic. Usually I add parsley but forgot! I also sprinkled RF Parmesan Cheese on top.
Saturday Dinner: My friend and I went to Applebees. We got Artichoke Spinach dip for an appetizer (not pictured) and then the Oriental Chicken Wrap. I ate half of what is pictured here and took the rest home for leftovers!! Also, we split a strawberry ice cream drink. It worked out well because we both wanted it, but didn’t want a whole one so they split it for us! Great solution
Sunday Breakfast: 2 Eggs with a toasted pita spread with light Smart Balance and SF Jam.
Sunday Lunch: Leftovers – BBQ sandwich, pickles, jello, dessert, chips, and a plate of veggies. Also pretzels with dip.
Sunday Dinner: Baked Tilapia, Baked fries, leftover Mashed Cauliflower, and leftover Couscous.
