Alright people, it’s time
Here is the Apple Pie Enchilada recipe that I started making when I began Weight Watchers. It is seriously the easiest recipe EVER! And the best part? You will probably have the ingredients on hand already!
Ingredients
- 1 medium sized apple – cored, peeled, and chopped
- 1 Light Laughing Cow Wedge (Swiss flavor)
- Whole Wheat Pita, 1 Whole Wheat Tortilla, or 2 Waffles
- Cinnamon
- Splenda **optional**
Step 1:
Put peeled, cored, and chopped apple in a bowl and toss with Cinnamon and Splenda (if desired).
Step 2:
Microwave for 3 minutes, or until soft.
Step 3:
While your apple is cooking, spread your Laughing Cow cheese wedge on your pita, waffle, or tortilla. This time I used a pita because I had it on hand. My favorite is using 2 waffles! My second choice is a pita, and my third choice is a tortilla
Step 4:
Spoon the cooked apple pieces into your pita. You can either just let it sit for about a minute to “melt” the cheese, or you can microwave for another 30 seconds.
Yes, it’s truly THAT EASY!!!! I told you
And it’s SOOOOOOO tasty! Seriously!
This has to be one of my most favorite concoctions ever because it’s so easy, quick, and DELICIOUS!!!! I love it!
**Note: You can also top it with 2 Tbsp Fat Free Cool Whip! I usually do this but didn’t have any along with me at work!**
**3 WW Points or about 175 calories (Depending on the size of apple and kind of bread product you use)

I just found these amazing tortillas at Safeway that are 80 calories each (they’re huge, almost the size of the 200 calorie ones) and each one has 12 grams of fiber. Maybe I’ll try this with them!
yum! i’ve had that before just without the tortilla, i must give it a whirl! you know what would make this even better… peanut butter

I cannot WAIT to try out this recipe! I already love apples and laughing cow just plain cut up, but all heated and sweetened and wrapped in a lovely tortilla? Don’t think it could get much better!

I always microwave my apples but never thought to put them in a pita? Genious! Yum it looks sooo good, def going to try that out soon. Its reminds me of a healthy apple empenada!
Ok, I seriously need to try this. I might hold off on the cheese and put it through my panini press? Then maybe slather it with cheese.

Thank you so much for posting this yummy idea! Did you invent it? I tried this last night for an after dinner snack and oh my! DELISH and filling! By the way, do you mind me asking how tall you are? I think our stats are pretty similar. I’m tettering in the mid 120′s, but like you, would like to get back around 118. I reached that a year and a half ago, but couldn’t maintain it. My body may just not like that number, but I’m willing to try again. Anyway, good luck to you and by the way, I’m going to try your oatmeal creme brule this weekend! Can’t wait!! I think our taste in food is very similar also, so glad I found you site!!
Nevermind, just looked again and saw that you’re 5’2. Very close to me – I’m about 5’4. Are you still counting points? I still can’t decide what works best. I guess it’s always being constantly vigilant over what we eat and how active we stay.
Good morning Melissa! First, you’ve got a great blog! I love the simplicity of your recipes. Very recently, someone sent me a link to your apple pie enchilada. thought it looked good and easy (2 of my favorite things), so I thought I would make it. Unfortunately I fell asleep before I could finish it. So this morning we made cottage cheese pancakes and used the apple filling as a topping. It was great!
