Get in my Belly

***Thank you SOOOOO much to our dear friends Sam and Jess for lending me their camera!!!  I ran crying to them Sunday with my sob story of forgetting my camera at my parents’ house and their loaning me theirs until I get mine back this weekend!  THANKS GUYS!!!!  I owe you big time!!***

First of all, let me just say again how happy I am to have a new running bestie!!!!  Last night I had a crummy day at work (I’ll skip the boring details) and wanted to do nothing but come home, put on my PJ’s, and crawl into bed….yup, just one of those days.  Unfortunately Fortunately :) I had already made plans with Jennifer to go running after work.  I was very apprehensive about it because I’ve only done one other afternoon/evening run and it SUCKED!  I mean, feel like I had to throw up/pass out/faint SUCKED!  Jennifer promised me though if I hydrated myself all day, drank gatorade on the run,

and fueled up with fig newtons, I’d be running like I was in first place in the Boston Marathon!  And…….IT WORKED!  Don’t get me wrong, I still dragged a$$ and was still slow, but I DID IT!  We did 5.5 miles like rockstars, on a Monday night!?!?!!!!!  I was so proud of us :)   We also took her daughter Ireland who is sooooooo adorable and has the prettiest blue eyes!  I don’t think she had as much fun as we did gabbing away though!

Upon our return (@ 8p m!) I promptly ran some more…but this time into the kitchen to feed my tum-tum.  Actually, I wasn’t even hungry at all after the run!  But I figured if I didn’t get some supper in me, I’d be awoken in the middle of the night with a growling belly.  I recently got my hands on some Shirataki Tofu Noodles, which I love!!  I decided to do something completely different with them though:

Baked Shirataki Spaghetti

**serves 3*

  • 2 Packages Shirataki Tofu Noodles
  • 1/2 cup spaghetti sauce
  • 4 oz chicken (or meat of your choice)
  • Spices to your liking (I used garlic powder, pesto seasoning, and Italian seasoning)
  • 1/4 cup Reduced Fat Cheese

Step 1 – Spray a casserole dish and add your noodles

Step 2 – Add your chicken, sauce and seasonings, then mix together

8.25 006 Step 3 – Bake at 450* for 20 minutes

Step 4 – Add cheese and broil for 2 minutes

Step 5 – Pair with Garlic Bread and ENJOY!!!

This was SO good and tasty, and so light in my tummy that I didn’t have that “I ate pasta and now I need a nap” feeling!  Get in my belly!

Moving forward to today, we’ve had a pretty relaxing night having leftovers and taking Baylee to the vet for her routine shots.  (P.S. Vets are EXPENSIVE!!).  I opted for some extra sleep this morning and skipped my morning workout, but I did go to the gym with a friend at lunch and got in 30 minutes on the elliptical!  I need to rest up tonight though as Jennifer is meeting me bright and early tomorrow morning for a quick run before work.  I think the best part of having a running partner is the inability to cancel – no matter what, now I’m getting up early to run!

Last but not least, here’s a warning to my readers:  DO NOT BUY THESE!!!!

Holy cow.  I downed these babies in 5 days flat (and that was with some extreme self-control) from when I bought them in Boston last week.  They are one of the most addicting things I think I’ve ever eaten in my life!! 

And now that I’ve filled your head with visions of chocolate and peanut butter, Good Night ;)

Emergency!!!

AGH!!!!!!!!!!!!!  I forgot my camera at my parents’ house last night!!!!!  We live an hour away so I can’t justify spending 2 hours to drive and pick it up…plus I’m going home again next weekend so I can always get it then, but I have no clue what to do in the meantime!  I’m trying to check with friends to see if I can borrow one for the week, so wish me luck!  Otherwise it may be a wordy, picture-less week :(

In other news, my run with my new friend went AMAZINGLY well yesterday!  I was super worried about being able to talk and run at the same time, but honestly?  It was no problem!  We just slowed our pace down a bit and chatted our little hearts away.  I still can’t get over how much we have in common!!!!  We did 10 miles and it flew by!  I am so excited to not only have a running partner but also to have a great new friend!  Hi Jennifer (if you’re reading) :)   I actually came home and was talking about it nonstop I was so excited :)   We’re going out again Monday after work for a quick run!

The Corn Roast was also a blast last night!  Pictures to come when I have my camera back :)   My aunt was in town from Phoenix and we got to spend a few hours chatting and hanging out!

I’m excited for today because I’m up early to take Baylee to the dog park and then Chad’s family is coming over to hang out and we’re grilling out!!  Hopefully the weather cooperates :)

Show me the CORN

Thanks for all the feedback about the running skirt!!  :)   I think it’s funny that we’re all running around in the same Target Running Skirt!  Yes, for all those that asked, I got the skirt at Target!  Don’t you just LOVE that store??

Boy am I happy it’s Friday!  This was a loooong week.  Isn’t it funny that somehow, short weeks sometimes seem the longest?  Even though I had off Monday (remember all my crazy flight delays resulting in me missing work on Monday??) I was just pooped all week and the weekend couldn’t get here fast enough!  I had an okay day at work but my new snacks made it fabulous!  Thanks to the amazing SWAG BAGS at the Healthy Living Summit (!!!), I was able to try a few new things that I was so freaking excited about!!  Man did that swag bag rock!!

I’ve heard about these babies but haven’t tried them as they don’t sell them anywhere near me.  The verdict???  YUM!!!!  I absolutely loved these little guys!  And even better?  The ingredients:

Yup, organic mangos, that’s it!  SO yummy!  I almost wished I had saved these for a road trip or something since they’re so portable.  I just may have to order more online!

I absolutely adore Angela’s Blog and I’ve been drooling over her homemade bars forever….Thankfully, it was good.  Okay, REALLY good!  I LOVED this bar and will definitely be ordering more once they’re available to ship to the US!  It was so moist and yummy!  I literally was making little “ooh” and “ah” sounds and my coworkers probably thought I was absolutely nuts.

I tried Barney Butter once before when they sent me a sample, but I’ve never had the crunchy kind.  I decided to try it on…..OATMEAL!

I made mine with Vanilla Soymilk and added 1/3 cup cottage cheese and half of a banana.  YUM!  I forgot how much I loved Barney Butter!  It’s just so creamy and well…yummy!  I can totally see why it’s Tina’s 3rd love (after Mal and Murphy of course).

My day was made even yummier when I tried some of my Trader Joe’s finds: Chocolate Covered Edamame and Chocolate Covered Sunflower Seeds!!!

I suppose it’s time to hit the hay.  I’m getting up bright and early tomorrow to head out on a 10-mile run with a new friend!  A few weeks ago I went for a massage and I ended up really hitting it off with my massage therapist :)   We talked about dogs and running the whole time and by the end we were exchanging digits!  LOL  We’ve been trying to get together for a run for weeks now and tomorrow finally works for both of us.  I’m excited to have a running buddy (FINALLY!!) but nervous….she’s ran multiple marathons so I’m worried I won’t be able to keep up!  Plus, I’m so used to running by myself and zoning out to my iPod that I’m not sure if I’ll be able to hold a regular conversation AND run!  I don’t have enough air in my lungs for both :)   haha

After our run, I’m coming home to clean up and get pretty and then we’re heading to my parents’ house for a Corn Roast!  My parents have fields upon fields of fresh corn and we always look forward to the end of August when all the cobs of corn are ready!  My aunt from Phoenix, AZ is flying in to visit so my parents are throwing a big corn roast where they roast a TON of corn over a huge grill and then the cobs are dipped in a can of butter!  For anyone that hasn’t been to one or heard of it, it’s quite a big deal :)   My mouth is watering thinking of it!  I’ll post pics for sure!

And then Sunday we are having Chad’s fam is coming over and we’re chillaxin’ outside and grilling out!  It should be a great weekend with a mix of fun and relaxation which is our type of weekend :)

Oh yeah, and 17 Again was an awesome movie!!  Chad and I both loved it and would highly recommend it!!  I’m pretty much in love with Jenny after she said I had nice legs ;)   (My legs are my “problem area” so hearing anything close to me having nice legs makes me squirm with glee!)  Anyway, I thought it was funny that she just saw this movie too!  We watched Gran Torino tonight and that was great as well!  A little slow in the beginning but it ended up being a great movie!

I’m a RUNNER!

Ever since running skirts took over the blog world, I’ve wanted to jump on the bandwagon.  I’ve always seen running skirts as a TRUE running outfit and that only TRUE runners wear them….well, I guess I’m a true runner!

That’s right, this morning I wore a running skirt for the first time!  I’m not going to lie, I actually bought one 3 or 4 months ago but I’ve been too afraid to wear it.  Until recently, I’ve even had trouble wearing shorts because they seem to ride up too much so I always stick with pants or capris.  I finally found shorts that work, and after hearing Heather’s rave reviews and our discussions about them this weekend, I figured it was time to give my running skirt a try.

The Verdict?  I LOOOOOVED it!!!  At first it was really weird and the shorts felt strange, but it felt so freeing!  I can’t wait to wear it again…it was actually so comfy that I wore it around for a little while after my run this morning as well ;)  

I’m also super excited about my other “new item” today: a Body Bugg!  Chandra and I did a swaperoo this weekend at the summit – I’m borrowing her Body Bugg (because I’m really contemplating getting one) and Chandra borrowed my Garmin (because she’s really contemplating getting one).  I was so excited about this because we’re just trying it out for a few weeks.  I must admit, I’m totally missing my Garmin!  But I can’t wait to try out this new contraption and see what it says!!

We are currently in the middle of Date Night!  Don’t you just LOVE date nights?  We are grilling out, watching 17 Again, and making popcorn :)   I feel like I haven’t had a chance to unwind since returning from Boston so this is just what the doctor ordered.

Alrighty, Day 2 of the Healthy Living Summit:

We had originally planned on going for a short run Saturday morning but after our crazy long day that started around 3:30am Friday, we decided instead to sleep in a bit and just head to the conference.

It started out with an amazing breakfast including Stonyfield Yogurt and MixMyGranola!  It was SO delicious!  Fresh fruit too, yum!

We may have played hookie during the Body + Soul presentation…..hey, I never did it in school so I was overdue!  After all the amazing and inspiring presentations, we got all gorgeous’d up and hit the town for the Fisherman’s Festival downtown.  It was a loooooong walk and Renee was quite the sport walking the whole way with her boot!

I can honestly say, the meal (Seafood Surprise or something like that) was one of the BEST meals I’ve ever had in my life.  For real.

While everyone else decided to call it a night, we decided to head out for one more and make the most of our Boston experience!  Fab 5 at their finest :)

Sunday

Sunday we woke up bright and early for a 6 mile run!!  Boy was it hot.  I’m not going to lie, I almost passed out a few times!  In Wisconsin, I’m used to running in 40-50 degree weather because I run early in the morning and it doesn’t get that hot to begin with….I want to say it was already 75-80 when we ran Sunday morning?  UGH…

After brunch, a small group of us headed to…….TRADER JOE’S!  I was so freaking pumped because I’ve only been to a TJ’s twice and there aren’t any near us in WI!  So I jumped at the chance to go :)

After TJ’s, it was time for a quick lunch with Chandra and Renee.  We ate at this cute little place by the hotel and it was an amazing lunch!

After that it was time to head to the airport….that’s when everything went downhill.  A reader, Amanda, from Boston (hi, Amanda if you’re reading!!!) was gracious enough to take us to the airport for our 4:00 flight.  We were literally about to board when they announced that “Flight xxxx has been CANCELLED”!!!  WHAT?!?

We were connecting in Chicago and apparently they were getting thunderstorms and couldn’t let our flight come in.  Big Bummer.  I love Boston and all, but we just wanted to get home!  Plus, I was scheduled to work Monday and then needed to use up a vacation day :(   Oh well, what can you do!?  So after a long wait for a shuttle to come get us

I got up the next morning and took advantage of working out with a gorgeous view!  I wish my view was this nice every morning :)

Once 2:00 rolled around we shuttled back to the airport, only to find our 4:00 flight was delayed, again due to storms in Chicago.  Grrr!  We then had a mechanical delay on top of that!  We didn’t end up leaving Boston until 5:30 so we knew we were going to miss our 7:20 connection…thankfully that flight was ALSO delayed until 9:30!  SHEESH!  Seriously, I LOVED Boston but I’ve never wanted to get home so bad in my life!  I rolled in the door around 11:30pm Monday night, 27 hours after planned!  :(   Oh well.

Recap

Ah, Boston.  I knew I was going to have fun, but I had no idea how much I’d love Boston, or how many lasting friendships I’d make!  It was so fun, inspiring, and educational to be around so many ladies (and a few gents) with the same goals and passions in life.  I was truly inspired and will remember this weekend for the rest of my life.  Thank you, Chad, for “letting” me go and urging me to take this trip of a lifetime.  I would do it all again in a heartbeat and I really, REALLY hope I can go again next year!  Thank you HLS ladies for putting on such a wonderful event!  I had a BLAST!!!!  :)

Home Sweet Home

Did you miss me??  I am finally back home!  Well, I got home last night, but it was about 27 hours later than planned!  More on that later :)

I have a LOT to say so I may have to break this down into a couple posts.  Most of you have probably already heard all about the Healthy Living Summit but that’s okay! 

I must say, the summit was a TOTAL BLAST!!!!  I was so excited that it was held in Boston, MA, as it’s a place I’ve always wanted to visit!  And it definitely did not disappoint…actually, Boston was even better than I imagined!  As you all know, I’m a total small town girl and although I love visiting big cities, I could never live in one.  Well Boston was different – it just didn’t feel too big city to me!  It was very walkable which was my favorite part.  Where I live in Wisconsin you definitely need to take a car everywhere you go, so that made Boston even more impressive.

FRIDAY

My day started with a 3:20am wake up call.  Boy was that tough!  But as soon as my alarm rang it was very easy to jump out of bed knowing that I had such a fun day/weekend ahead of me!  I hit the road around 4:30am and met up with my friend, Renee, so her wonderful husband could drive us to the airport (Thanks, Justin!!).  We were a little bummed and scared when we got to the airport – we were getting horrible storms in Wisconsin so it delayed the flight a tad.  Before we knew it we were heading out though….unfortunately because of the bad storms, it was a BUMPY ride!  Like roller coaster, hang on to your seat, say a prayer in your head, bumpy!  But we made it :)   We connected in Chicago and before we knew it, we were landing in Boston.

My sister-from-another-mister, Chandra, greeted Renee and I at the airport as we were arriving at roughly the same time.  YES, I finally got to meet Chandra after about 6+ months of emailing every day :)   I think we were both acting like it was meeting our internet dating partner!  LOL

After checking into our hotel, we couldn’t wait to head out and tour the town.  Check out our AMAZING view from our balcony on the 16th floor!

Our next stop?  Boston Common!  It was GORGEOUS….just gorgeous!  The 3 of us could not stop talking about how jealous we were of Bostonians!

So pretty.  We hit up lunch soon after, as we were starving.  Then we headed back to the hotel to meet our other 2 roomies for the weekend, Rose and Leslie.  These ladies were so amazing, beautiful, and fun!  I seriously could not have asked for better roomies.  Even better?  Adjoining doors!  FUN :)

Once we got all settled in, we all agreed that it was time for some JP Licks!  I have been hearing about this place forever so I could not wait to give it a try!  We decided to take the train/subway/not sure what it’s called there and we were all super excited since we’ve never done it.  I must say, I was a little scared and intimidated but it was fun :)

Soon after, it was time to get back to the hotel so we could get all dolled up for the Cocktail Party.  We had a major fashion show in the hotel rooms and finally decided on our outfits/hair/jewelry.  Here are the Fab 5:

We walked on over to The Rustic Kitchen and were so impressed by this place!  It was then that I finally got to meet some more lovely bloggers and readers, including Meghann!!!  LOVE this girl :)   We hit it off right away and it made me wish (again) that I lived in Florida.

I also got to meet her sweet sister, Kelly, and we got to participate in some puppy talk about Oliver and Baylee :)   I sure wish Baylee could meet their Boxer, Scooby, someday!

I also got to meet Whit!!!  I loved, loved, LOVED her accent :)   Okay, I love all accents….the whole weekend I felt like I was the one talking normal and everyone else just sounded different and unique :)

Boston Bound!!

I have to get up in less than 5 hours to head to Boston!!!  EEEKS!!!  But I am soooo excited for the Healthy Living Summit!  I need to head to bed (obviously)…I can’t wait to tell you guys all about it when I get back!

So I have great news!!!  I found my dress for the Healthy Living Summit cocktail party for Friday night in Boston!  I can’t wait!  I was going to post pics but it might as well be a surprise, right??  ;)   Now…..what to wear on Saturday??

Like I mentioned last week, I’ve been having more frequent, smaller meals lately and it’s been working like a charm!  I basically have:

My new lunch wraps have been my favorite thing yet!  I’ve been using lavash bread because they’re huge so you get a lot of bang for your buck.  I take half and turn it into a wrap: I melt RF Cheese and deli turkey in the microwave and layer it with cucumber and green pepper!

I then take the other half and microwave it plain for 90 seconds…..during that 90 seconds, food magic is happening!  It gets crispy and you can then break it into “chips” and I dip it into salsa!

This whole meal (wrap and chips) is only a little over 200 calories!

I made a pot pie recipe for supper.  I used to make this ALL the time but forgot about it for a little while…I can’t remember if I’ve ever made it on the blog, but this recipe is AMAZING!!!

EASY CHICKEN POT PIE

7.5 oz. can Pillsbury buttermilk refrigerated biscuits
12 1/2 oz. can cooked chicken breast, drained
10 3/4 oz. can 98% fat free cream of chicken soup
8 1/2 oz. can of peas and carrots, drained
1 teaspoon dried parsley
1/4 teaspoon black pepper
1/8 tsp. salt

Methods/steps

Preheat oven to 350 degrees. In a medium bowl, combine chicken, soup, peas and carrots, parsley, black pepper and salt. Mix well to combine. Spray an 8″ x 8″ baking dish with non-stick cooking spray. Place chicken mixture in baking dish. Slightly flatten biscuits between your palms. Top chicken mixture evenly with biscuits. Bake for 25 minutes or until biscuits are golden brown. Serve immediately.

Nutrition Information per serving:
268 cal., 2.7 g. fat, 2.5 g. fiber

WORKOUT

I went to the gym at lunch today and did a strength workout!  It felt so great getting some good strength training in because it’s been about 3 weeks since I’ve done weights (due to lack of time).  I hope I’m sore tomorrow :)   The good kind of sore anyway where you know you got in a great workout!

I had planned on getting up at my normal time (5:30) to get in 45 minutes of cardio but I didn’t fall asleep until around 2am!  :(   Don’t you hate that when that happens??  So I opted to sleep in and just do my workout at lunch.  A girl needs her sleep!!

***My heart goes out to Meghann and Andrea who both lost pets this past week/weekend that were so near and dear to them!!  Having gone through horrible pet losses in my past, my heart just broke when I heard both of their stories!!!  I couldn’t help but rush over and give Baylee the biggest bear hug in the whole entire world.  Hold your loved ones and fur-babies near and dear! ***

Dedication

Dedication – that’s all I could think of this morning as I was running in the pouring rain at 5:30 am!  Am I crazy?  Maybe!  But I actually loved it.  I had a 4-mile run planned this morning and got up and dressed before I realized it was raining outside.  BUMMER :(    The thought of running in our basement on the treadmill made me nauseas so I figured I’d go in the rain and at least do 1 or 2, and then I could stop.  Well it was actually a great run!  I didn’t take my IPod because I didn’t want it to get wet.  Instead I listened to the rhythmic raindrops and it was an extremely peaceful, mind-clearing run!!!  I’d highly recommend it!

Does anyone know if a Garmin can get wet??  I wanted to run with mine but was too afraid of it getting ruined….

So I apologize I haven’t posted a Seattle recap yet but if you can believe it, we’ve been busy every night since I got back!!  AH, what a busy life I lead!  And it’s not letting up anytime soon……I just looked and the first time we have a weekend free, is OCTOBER!!!!!  Holy schnikees!

Anyway, our trip to Seattle was literally AMAZING.  Simply amazing. It was a short and sweet trip – good because I was only away for one night and didn’t get too homesick.  Bad because we didn’t really get too much of a chance to see Seattle.  Once we got into the airport, we had a 2.5 hour drive to our destination: Quincy, WA.  It turned out to be one of the best things because we got to see some amazing mountains!  Here’s a photo recap:

Oh yeah, and since I’ve been a bad food blogger lately, I wanted to let you know I’ve been having one of these everyday:

I also have a brand new fave lunch that I am obsessed with that I can’t wait to show you all!!!  I’ll try and remember to take a picture of it tomorrow.

I’ve been changing it up a little bit and having 5 small meals a day….I’ve tried this in the past but haven’t been satisfied, probably due to choosing the wrong things to have.  I think I found a perfect match for me though!  My latest:

  • 8:00 – Coffee with a lot of milk
  • 9:30 – Amazing Meal smoothie
  • 12:00 – Oatmeal with Banana
  • 3:00 – Wrap with turkey and cheese and veggies on the side
  • 6:30 – Supper (we’ve been grilling a lot lately so something like a grilled chicken breast, 2 veggie sides, and fruit)

It has honestly been working very, very well!  I feel like I’m always eating and I’m always content….not starving, and not stuffed!  I think I FINALLY found, after 5+ years of searching, my perfect match :)   Allelujah!

Alright, it’s time for bed for this girl.

Dog Heavy

A friend of ours is out of town for a few days so Chad’s been letting out her yellow lab/golden retriever puppy.  Tonight we decided to bring her over to play with Baylee!  What a BLAST!

It was hilarious watching Baylee trying to keep up with Marlo!  Baylee can’t grab onto anything or fetch anything to save her life, whereas Marlo definitely could!  Poor Baylee :)

Within about 5 minutes, Baylee was passed out in the grass!

OTHER STUFF

In other news, I’m not looking forward to my early wake-up calls the next 2 mornings.  Since I’ll be in Seattle this weekend, I’m going to get my long run in before work tomorrow.  Normally by the time I get up, wake up, let Baylee out, and get going, I barely have time to get in a 3-mile run….but tomorrow I have to squeeze in 7 miles.  I’m excited though to have such a great workout in before work!  And then Friday I have to leave my house by 4:30 am to get to the airport!  That means a 3:30 wake-up call!!!!!  YIKES!  One of our flights is 4 1/2 hours so I’m hoping I can get in a good nap :)   I’m currently reading My Sister’s Keeper so I’m also hoping to finish that (or come close at least).

Speaking of….I need to get going so I can get to bed at a reasonable time!  We have Chad’s softball game tomorrow night so I probably won’t be back until after Seattle but I will have a recap for you then!!
