New Recipe Find!

Breakfast held me over well enough that I didn’t need a snack today!  yay 🙂

For lunch, I had a leftover Pita Pizza that I made last night and just reheated for lunch.  It was just as good as last night!  I also had 2 leftover peaches from the can I opened yesterday.

Also….I forgot to put more info up from the things I made at our friend get together last Friday.  One of the things I made, was Jogurt….JOGURT???  Yes, Jogurt 🙂  I actually got the original recipe from Roni.  She calls it Yelatin, but I like Jogurt better 🙂

Basically all you do is start making SF Jello the normal way (boil 1 cup water, stir in Jello mix until disolved) but then instead of adding 1 cup of Cold Water, you add 1 cup yogurt!!!  You can do it with either Plain or Vanilla Yogurt – I’ve done both and they’re both good!  It makes the Jello SOOO creamy and delicious.  I’ve made it 3 times for company now and it’s a huge hit!  Oh, and top it with FF Cool Whip, of course 🙂

Last night I whipped up a batch to have for snacks today – so I just took it and put it into 2 bowls and refrigerated overnight.  It really couldn’t be easier!

PIZZA!!!!!!

Since all my snacks were consumed early today (oops!), I was lucky because I had to run home for lunch to let Baylee out, so I was able to grab a snack for the PM.  One of my healthy, easy, new favorites is pumpkin yogurt.  I usually try to use plain yogurt (not a fan but it tastes okay when disguised!), but didn’t have any so used 3/4 c pumpkin, 3/4 c Light Vanilla yogurt, cinnamon, and 2 small graham crackers on top.

It did a great job of fueling me through the afternoon and through my workout!

It was very, very hard going to the gym because I came out to about 4 inches of snow on the ground     😦  But, I went and was glad I did.  I did 30 minutes on the treadmill (running/walking combo) and 30 minutes of free weights.  It felt great since it had been almost 5 days since a gym workout!

Chad was supposed to have softball practice tonight, but because of the stupid weather, they weren’t up to practicing in the snow.  Crazy, I know! 🙂  It’s unfortunate too because their last two practices have gotten called off due to weather.  They only have one left before the season starts!

When we got home, we decided to play with Baylee in the snow….at first it was going great.  We were throwing snow at her and she loved it!  Chad and I even got in a snowball fight.  Then Baylee ran away.  Kind of…..to the neighbors yard.  Then she thought it was a game so she went one more house away, then one more…..I wasn’t laughing.  FINALLY I caught her and dragged her back and play time was officially over!

For supper I made a pita pizza – YUM!  I love, love, love pizza!  Instead of cutting it out of my eating altogether since it’s not the healthiest option, I just find different ways to enjoy it!   Tonight I put it on a pita: Whole wheat pita, LF pizza sauce, garlic powder, Italian seasoning, turkey pepperoni, green peppers, and LF cheese.  I was so excited to add canned mushrooms – my fave pizza topping – but our pantry had none 😦  oh well.  Instead I added some crumbled hamburger that Chad had for his supper.  It made the pizza!
