Ugh, sorry guys! Our new goals at work make it almost impossible to post on my blog! How dare work get in the way of my hobby and passion!!!! 🙂
So, instead of just posting my last few days’ worth of meals, I will post an EASY peasy recipe, and a new item! How about that??
Before I get to the fun stuff though, I want to mention an issue I’ve been having – I can’t comment on my own blog!!! I’ve tried like 5 times responding to people and posting a comment, but it doesn’t stay! For some reason once I submit it, it just disappears!!! WEIRD!?!?!? So……a lot of you asked about the coasters I made for our friends wedding. I went and bought 4″ x 4″ tiles at Lowe’s, and then for the lettering, I custom made my own letters through Uppercase Living (that party I went to like a month ago at my sisters)…..it’s the coolest stuff! And it was SO much fun to make! And, get this: On Monday, the groom asked Chad where in the world we got those coasters from because the bride just totally loved them! Chad told him I made them, and the groom said the bride wants to talk to me and learn how to do it! That TOTALLY made my day!!!
And yes….I am actually WALKING a whole freaking marathon on Saturday! I’m SO nervous….it doesn’t sound that bad because I mean, how hard is walking? But that’s like 8 HOURS, yes HOURS, of walking! And get this, right now they’re expecting it to be 87 and sunny that day! That is the ONE day I want it to be colder! Walking 8 hours in 87 degree heat and horrible humidity? Not cool!
Alright, back to the topic at hand….A recipe! For…..Banana Cream Pie!!!!! My husband’s favorite, favorite thing in the whole wide world is Banana Cream Pie! Well, I love it too but my hips don’t, so I set out to make a light version of the old classic, and guess what? I succeeded! 🙂 I don’t have too many pics of this, but visualize 🙂
Banana Cream Pie
- Mix 1 package of SF Banana pudding with 1 cup of Skim Milk
- Add in 1-2 bananas, sliced (more or less depending on how many bananas you want in it)
- Put the pudding with the bananas into a Reduced Fat pre-made Graham Cracker crust
- Add 3/4 tup of Fat Free Cool Whip
- Add an additional 1/2 sliced banana on top
- ENJOY!
Yes, that’s it! I told you it was easy! And honestly, Chad couldn’t even tell the difference! He LOVED it just as much as regular Banana Cream Pie! And it was a dessert I could actually enjoy and not sacrifice my waist line 🙂
You could also do this with different types of pudding: chocolate (YUM!), pistachio, etc.
Next, on to the new item of the week. I was shopping at our Super Wal-mart earlier this week looking for some new veggies to try, and saw these:
I know it’s not the healthiest option out there, due to the added cinnamon sauce, but it still had only 90 calories for 3/4 cup, and it was actually a vegetable I figured Chad would eat! I was right….it was really, really good! It almost tasted like apples with cinnamon butter on! And all you had to do was steam it in the bag in the microwave for 4 minutes! I would recommend them!
And not really a new item, but something new that I tried yesterday was adding fresh cherries to my oatmeal! YUM – it was really, really good!
